Southern Style Fried Potato Recipe
Equipment
- 1 Peeler or you can use a hand knife
- 1 Medium-Large Stove Pot
- 1 Deep baking dish I used my glass pyrex square baking dish
Ingredients
- 3 lbs Baby Red Potatoes
- 4 cups Chicken or Bone Broth Depending on the size of your pot, this may vary. Just make sure the potatoes are covered and submerged in the broth.
- 2 tablespoon Grease or Oil of your choosing I used bacon grease I had laying around
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 tablespoon rosemary
- 1 teaspoon pepper
- 1 tablespoon onion powder
- 1 tablespoon thyme
- 1 tablespoon basil
- 1 tablespoon Everglades or all purpose seasoning
Instructions
- Preheat your oven to 400℉
- Clean and peel your potatoes. Add them to your Medium to Large Stove Pot and boil in chicken or bone broth. You want the broth to cover the potatoes completely.
- Add your grease or oil to your baking dish and place in oven to preheat the dish.
- When potatoes are tender (usually takes about 25 minutes; use a fork to test tenderness), remove liquid from the pot and leave potatoes in there. Add in all the seasonings and mix well so the flavor is evenly distributed amongst the potatoes.
- Place the potatoes in your preheated baking dish. Put in oven for 1 hour, turning the potatoes over every 20 minutes so they are evenly crispy when done!

Storage
Homemade fried potatoes can typically be stored in the refrigerator for up to 3-4 days. To store them properly, follow these steps:
- Allow the fried potatoes to cool to room temperature before refrigerating them. Hot or warm potatoes can create condensation inside the container, which can lead to sogginess.
- Place the fried potatoes in an airtight container or resealable plastic bag. Ensure that the container is tightly sealed to prevent moisture from entering.
- Store the container in the refrigerator at or below 40°F (4°C). The colder temperature helps slow down bacterial growth and maintain the quality of the potatoes.
- When you're ready to reheat and enjoy the leftovers, you can use an oven, stovetop, or microwave to warm them up.
Remember that the texture of fried potatoes may change slightly after refrigeration, and they may become less crispy. Reheating them in an oven or on a stovetop can help restore some of their crispiness. Always use your judgment and perform a visual and taste test to ensure they are still safe and appetizing to eat before consuming them.
