I give this one a chef's kiss! This was so fun to make and although my pasta didn't necessarily turn out "pretty," it's homemade and made from the heart. The taste is delicious!

There's no wrong time for pasta! This recipe can be used any time of the year. I love making it around Valentine's Day and pairing it with my Homemade Fusion Cheese recipe to craft a delicious and savory Homemade Lasagna.

Here's what the process will look like!

Combine together and form into ball shape with your hands
Cut dough and roll out pieces to a flat sheet.
Craft your pasta shape according to what you're trying to make as a final dish. I'm making Lasagna with homemade mozzarella cheese here.
Hint: If using a pasta machine, gradually decrease the thickness setting as you pass the dough through several times until it reaches your desired thickness.
Substitutions
- Gluten Free - if you want to make this gluten free, try using gluten free all-purpose flour instead of regular all-purpose flour. While a 1:1 substitution ratio is a good starting point for many recipes, it's essential to consider the specific recipe, the type of gluten-free flour blend you're using, and the need for any additional binders or adjustments. Experimentation and practice will help you achieve the best results in gluten-free baking.

- Flavor - You're welcome to experiment with different shapes and flavors by adding ingredients like spinach, beet juice, or herbs to your pasta dough for unique variations.
Equipment
Your hands and your rolling pin are going to be the main equipment for this one! But if you have a pasta machine, you should definitely whip that out to craft the specific type of pasta you want. It will save you a ton of manual labor, but you know me - I love working with my hands so I don't mind all the rollin'!

Homemade Pasta Noodles Recipe
Equipment
- Rolling Pin
- Parchment Paper
- Knife
- Pasta Machine Optional
Ingredients
- 2 cups all-purpose flour
- 3 large eggs
Instructions
Making the Dough
- On a flat surface, create a little mound of flour with your 2 cups of all-purpose.
- Take your measuring cup and make a crater in the middle of your mound. Take your egg eggs, and crack them in the crater.
- With your fingers, mix the eggs in the crater. Then fold the flour into your egg mix and combine. Work it until it the mixture comes together. Keep going until you create a ball of dough.
- Grab a sheet of parchment paper and wrap the ball in it. Place in the fridge for 1 hour.
- After the hour, flour a flat surface and remove your ball of dough from the parchment paper. Place on flat surface and roll around on the floured surface.
- Try to flatten your ball with your hands or with your rolling pin. Then cut the dough into smaller portions to ease the process of rolling out your dough.
- Roll out each portion into a thin sheet using a rolling pin (or a pasta machine if you have one). Aim for a thickness of about 1/16 to ⅛ inch (1.5 to 3 mm). If using a pasta machine, gradually decrease the thickness setting as you pass the dough through several times until it reaches your desired thickness.
For Lasagna
- Once you have thin sheets of pasta dough, cut them into rectangular or square lasagna sheets, approximately the size of your lasagna dish. As you may have noticed, my lasagna sheets were definitely not the size of my lasagna dish, nor were they the same size as the next one. But at least it's still homemade!

General Cooking Instructions
- Bring a large pot of salted water to a boil. Carefully add the homemade pasta to the boiling water and cook for a few minutes until it becomes tender and al dente.
- The cooking time will vary depending on the thickness of the pasta, but it's usually quite quick—around 2-4 minutes for fresh pasta. Taste-test the pasta to ensure it's cooked to your liking.
- Once the pasta is cooked, use a slotted spoon or a spider strainer to remove it from the boiling water.

Storage
- If you plan to use the homemade pasta within a day or two, you can store it in the refrigerator.
- Place the fresh pasta noodles in an airtight container or resealable plastic bag and refrigerate. Be sure to dust the noodles with a bit of flour or semolina to prevent sticking.

I'm going to try this very soon. I used to make almond flour lasagna noodles and would simply roll a sheet of the "noodle" to fit the pan. LOL It's easy peasy and; honestly, you can't tell the difference after it's all put together and sliced.
