Ingredients
Pie Crust
- 2 Sleeves Graham Crackers each sleeve is approx 4.8oz packs
- 5 tablespoon salted butter melted
- ¼ cup cane sugar
Keylime Filling
- 3 whole eggs only need egg yolks for filling
- 1 teaspoon lime zest
- ½ cup lime juice can use from lime you zested
- 14 oz sweetened condensed milk
Pie Topping
- 2 cups heavy whipping cream
- 1 splash vanilla extract 2 if ya sexy 😉
- ¼ cup powdered sugar
OPTIONAL: Pie Topping Add On
- 1 whole lime for decorative placement on top of pie
Directions
Pie Crust
Preheat oven to 350℉. Grab your food processor and insert all graham crackers. You want to chop up the crackers so if there's a botton on your food processor that says "chop," press that. If your machine doesn't have that option, click "Pulse" and run until graham crackers look like large crumbs.
Take lid off and pour in your sugar and melted butter. Mix together by hand using a spatula. The result is going to be your crust. Transfer contents to your pie dish. I did not butter my pie dish.
Press down on your crust and shape to your pie dish. There should be a large crater in the center and walls surrounding.
Take your pie crust and place in the oven for approximately 8 minutes.
Keylime Filling
While pie crust is baking, grab your KitchenAid Stand mixer.
In your KitchenAid mixing bowl, add egg yolks, lime zest, and lime juice. Beat on medium speed for a few minutes until you see the contents getting fluffy.
Slowly add in your sweetened condensed milk, a little bit at a time, and mix on low until well combined and thick. Should only be about 5 minutes.
Once pie crust is done, remove and place on flat surface. Slowly pour in the filling contents into the crater of your pie crust.
Put pie back in oven for 10 more minutes. Once done, remove and place on cooling rack.
Pie Topping
While pie is baking, clean out your KitchenAid Stand bowl and dry. Add in your heavy whipping cream, vanilla extract, and powdered sugar.
Mix on low-medium speed until it becomes thick and fluffy. Usually takes 3-5 minutes.
You can place on top of cooled pie directly or you can follow my decorative steps below.
Optional Additional Steps
Transfer Pie Topping contents from Kitchen Aid Stand bowl to plastic Ziplock bag and place in fridge while waiting for pie to completely cool.
When ready, remove from fridge and grab your scissors. Cut a small hole in one of the bottom corners of the plastic Ziplock bag. This is now your homemade Piping bag.
Squeeze medium sized droplets of your whipped cream around the circumference of your baked pie filling. Continue to do so, making rings of droplets going into the center of the pie.
Once your pie is completely covered in whipped cream droplets, slice thin pieces of lime and place/disperse in between droplets.
