White Chicken Chili
Very easy to make creamy White Chicken Chili with hardy beans, flavorful chicken, and a rich, creamy broth. This recipe is one of my favorites because it’s so easy to make on those busy weeknights or weekends! I bet you already have a lot of the ingredients on hand so you can go ahead and pull them out and let's get to cookin!

I heard about this recipe during an afternoon tea chit chat with one of my girlfriends. She told me it was one of her weekly meals on rotation and that her family was obsessed with it so I obviously had to make it.
You can make this recipe year round, but I think it's a little better when it starts getting a little cold outside. There's something about this chili that warms the soul and it's so good after a long day, parked on the couch under a comfy blanket.
When my friend first told me about it, I honestly didn't think I would like it as much as I liked traditional chili but boy was I wrong. There's something about the way the flavors of this chili blend together so beautifully with the tender chicken, and that creamy rich broth just soothes the soul. I honestly like it way better than traditional chili now and I think everyone in my family does to.

Let's chat about these Ingredients,
Chicken, you can use a rotisserie chicken, leftover chicken, uncooked, pan or fried. It don't matter honey. Just use what you got!
Oil, you can use butter or any kind of oil you want to.
fresh onion and garlic, you can't leave this out honey and make sure you use fresh.
All the seasonings, don't skip these either cause your food will taste bland. Add all them seasonings honey.
Canned beans, corn and chilis, you can use canned, frozen or bagged beans. Whatever you want, just don't forget to add them.
Cheese, I like all cheese so you can add whatever cheese you want but for this one I added a mix.
Cream cheese, always full flavor.
Broth, you can use bone broth, chicken or veggie broth.

Let's make this chili honey!
Add 1 or 2 tablespoon of oil to a dutch oven or pot over medium heat.
Diced up chicken, onion and garlic.
Add flour and all seasonings to the chicken and give it a good mix around until the chicken is completely covered with seasonings.
Add chicken to the pan and cook for about 4 to 5 minutes on each side. It should be a nice golden brown color.
Now remove chicken and add your onion and garlic and sauté for 4 to 5 minutes.
Once onion and garlic is cooked and chicken, broth, cream cheese, heavy cream, corn, beans and chilis to the dutch oven. Cook it for about 30 minutes.
Add 2 handfuls of cheese to the pot and your done honey! Grab you a bowl and blanket and head to the couch and enjoy your favorite show. Mine is currently The Great British Baking Show.

- 2 Chicken Breast
- 2 tablespoon Flour
- 1 tablespoon Oil
- 1 Onion Chopped
- 2 Pieces of Garlic Chopped
- 1 Tbsp Chili powder
- 1 Sprinkle Cumin
- 1 Sprinkle Garlic powder
- 1 Tiny Bit Cayenne
- 1 teaspoon Chipotle
- 1 tablespoon Parsley
- 1 Sprinkle Pepper
- 1 Cup Chicken Broth
- 1 Can Corn
- 1 Can Butter Beans
- 2 Cans Great Northern Beans
- 1 Can Green Chilis
- 1 Block Cream Cheese
- 1 Cup Cream
- 2 Handfuls Cheese
Directions
