Strawberry Jam
There’s a certain kind of quiet that only happens in the kitchen.
Not silence... but a soft kind of living. The sound of a knife against a wooden board. The rinse of fruit in a colander. Something simple, steady, and good.
That’s what this felt like.
A bowl of strawberries, still cool from washing. A few already sliced, a few waiting their turn. Sticky fingers before anything’s even cooking yet. Honey sitting off to the side like it knows what’s coming next.
I didn’t set out to make anything fancy. Just something to keep.
Something we could spoon over biscuits in the morning... or swirl into yogurt... or sneak a bite of straight from the jar when nobody’s looking.
And somehow, those are always the recipes that end up meaning the most.
What you’ll need:
2 pounds fresh strawberries, hulled and sliced
1/3 to 1/2 cup honey (depending on how sweet your berries are)
1-2 tablespoons fresh lemon juice
Optional: pinch of salt
How to make it:
Add your strawberries to a saucepan over medium heat.
As they warm, they’ll start to soften and release their juices. Use a spoon or potato masher to break them down to your liking, chunky or smooth, however you prefer.
Stir in the honey and lemon juice.
Let everything simmer gently for about 20-30 minutes, stirring occasionally, until it thickens and deepens in color.
You’ll know it’s ready when it coats the back of a spoon and slowly drips off.
Taste and adjust, maybe a little more honey, maybe a touch more lemon to brighten it up.
Let it cool, then store in a jar in the fridge.

Spread on sourdough with butter
Swirled into yogurt or oatmeal
Spoonful over vanilla ice cream
Layered into cakes or biscuits
Straight from the jar (no judgment)
