Ingredients
For the pasta

1 lb elbow macaroni (or shells)
For the Sweet Potato Cheese Sauce

2 cups mashed roasted sweet potato

2 tbsp butter

2 tbsp flour

2 cups milk (warm)

1 cup heavy cream (optional but worth it)

2 cups sharp cheddar cheese

1 cup smoked gouda or mozzarella

Big sprinkle of Southern Magic seasoning

Salt + pepper to taste
For the Chicken

2 cups shredded rotisserie chicken
-
½ cup barbecue sauce (your favorite-sweet or smoky both work)
For the Topping

½ cup panko or crushed buttery crackers

2 tbsp melted butter
-
Optional: extra cheese for the top
Directions
Roast whole or cubed at 400°F until soft and caramelized.
Mash until smooth.
Boil in salted water just until al dente. Drain and set aside.
Melt butter, whisk in flour (make a quick roux)
Slowly whisk in warm milk + cream
Stir in mashed sweet potato until smooth
Add: Southern Magic and Cheese (stir until melted and creamy)
Taste and adjust
Toss shredded rotisserie chicken with barbecue sauce.
Fold pasta into the sauce.
Add BBQ chicken and gently mix (or layer it if you want pockets of flavor).
Pour into a buttered baking dish or cast iron skillet.
