Slow Cooker Peach BBQ Chicken (Perfect for Tacos or Sandwiches)
Every summer needs one recipe that quietly becomes the recipe.
The one people keep sneaking back to the slow cooker for "just one more bite."
The one everyone asks you to text them before they even leave your house.
This Slow Cooker Peach BBQ Chicken started as nothing more than a little recipe experiment. I had a few ripe peaches sitting on the counter, a slow cooker begging to be used instead of heating up the kitchen, and a backyard full of hungry people.
I honestly wasn't expecting much.
But somewhere between those sweet summer peaches slowly melting into smoky barbecue sauce and that tender shredded chicken soaking
up every drop, something magical happened.
We piled it into warm street tacos with crunchy slaw, and before I had even sat down to eat, people were already asking, "Okay...you're going to give us this recipe, right?"
It's sweet, smoky, tangy, ridiculously juicy, and one of those meals that somehow tastes even better after it sits for a little while.
The best part? It isn't just for tacos. Pile it high onto toasted brioche buns for incredible BBQ chicken sandwiches, spoon it over baked potatoes, serve it over rice, or tuck it into wraps for an easy lunch the next day.
If you're looking for an easy summer crockpot recipe that feels like sunshine in every bite, this one deserves a permanent place in your rotation.
