Slow Cooker Citrus Ginger Chicken with Cabbage

Slow cooker citrus ginger chicken with cabbage is a bright, nourishing one pot meal that practically cooks itself. Tender chicken simmers low and slow in a fragrant blend of fresh citrus, ginger, and garlic, creating a light, flavorful broth that soaks into every bite. As it cooks, the cabbage softens and becomes silky, soaking up all that goodness. It's the kind of meal that feels both comforting and refreshing, simple to throw together, easy on the body, and perfect for days when you need something warm waiting on you at the end.


Ingredients:


2-3 chicken breasts

½ green cabbage, sliced

½ purple cabbage, sliced

1 onion, sliced

3-4 cloves garlic, minced

1-2 tsp fresh grated ginger (or more if you love it)

½ cup sun-dried tomatoes (chopped)

1 can of sweetened condensed coconut milk

1-2 tbsp pesto

1½ cups veggie or chicken broth

Zest + juice of 1 big orange

Salt + black pepper

Sprinkle of Southern Magic Seasoning 

Optional (but delicious)

1-2 tosp nutritional yeast (adds savory depth)

A splash of coconut milk if you want it silkier


Instructions:


Layer cabbage, onion, garlic, and ginger on the bottom of the crockpot.

Add chicken breasts on top.

Sprinkle in sun-dried tomatoes.

In a small bowl, whisk:

  • Bone broth
  • Orange zest + juice
  • Lemon juice
  • Pesto
  • Nutritional yeast (if using)
  • Seasoning

Pour over everything. Cook on LOW 5-6 hours (or HIGH 3-4).

At the end:

Shred the chicken right in the pot.

Stir everything together so those juices soak into the cabbage.

Cook your rice separately.

Spoon the crockpot mixture over rice and let those juices run into it.


Creamy Lemon Drizzle:

In a bowl mix:

½ Cup Greek yogurt (or sour cream)

1 tbsp lemon juice

Pinch salt

Tiny drizzle honey 

Drizzle over each bowl and enjoy.
