Ingredients

1 cup mashed ripe banana (about 2-3 bananas)

2 eggs

⅓ cup milk (dairy or almond)

¼ cup melted butter or coconut oil

vanilla
-
1 cup oat flour (or blended oats)

½ cup all-purpose or whole wheat flour
-
1 tsp baking powder
-
½ tsp baking soda

Pinch of salt

Protein (we’ll split this)
-
½ cup protein powder total
-
(¼ cup vanilla + ¼ cup chocolate)

2-3 tbsp maple syrup or honey (You can skip if bananas are super ripe)
Directions
Preheat oven to 350°F
Grease mini muffin tin (or use liners)
In a bowl mix wet ingredients, bananas, eggs, milk, butter/oil and vanilla
Mix in dry ingredients, flours, baking soda + powder and salt
Stir until just combined (don’t overmix)
Split the batter into two bowls
- Vanilla batch
Add ¼ cup vanilla protein powder
- Chocolate batch
Add ¼ cup chocolate protein powder
Optional: 1-2 tsp cocoa powder for richer flavor
Scoop into mini muffin pan
- Fill about ¾ full
Bake for 10-12 minutes or until tops are set + toothpick comes out clean
Cool slightly
They’ll firm up as they cool
Recipe Note
Don’t overbake → they dry out fast
If batter feels thick → add a splash of milk
Protein powders vary - adjust slightly if needed
Make them even more nourishing! (optional add-ins)
You could mix into either batch:
Finely shredded zucchini (moisture boost )
Mini chocolate chips (for the chocolate ones)
Blueberries (for vanilla)
