Protein Mini Muffins

Ingredients

  • 1 cup mashed ripe banana (about 2-3 bananas)

  • 2 eggs

  • ⅓ cup milk (dairy or almond)

  • ¼ cup melted butter or coconut oil

  • vanilla

  • 1 cup oat flour (or blended oats)

  • ½ cup all-purpose or whole wheat flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • Protein (we’ll split this)

  • ½ cup protein powder total

  • (¼ cup vanilla + ¼ cup chocolate)

  • 2-3 tbsp maple syrup or honey (You can skip if bananas are super ripe)

Directions

  1. Preheat oven to 350°F

  2. Grease mini muffin tin (or use liners)

  3. In a bowl mix wet ingredients, bananas, eggs, milk, butter/oil and vanilla

  4. Mix in dry ingredients, flours, baking soda + powder and salt

  5. Stir until just combined (don’t overmix)

  6. Split the batter into two bowls

  7. Vanilla batch
  8. Add ¼ cup vanilla protein powder

  9. Chocolate batch
  10. Add ¼ cup chocolate protein powder

  11. Optional: 1-2 tsp cocoa powder for richer flavor

  12. Scoop into mini muffin pan

  13. Fill about ¾ full 
  14. Bake for 10-12 minutes or until tops are set + toothpick comes out clean

  15. Cool slightly

  16. They’ll firm up as they cool
