Ingredients
For the Cake

2 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened
-
1 ¾ cups sugar
-
4 eggs
-
2 teaspoons vanilla extract

Zest of 2 lemons
-
¼ cup fresh lemon juice
-
1 cup buttermilk
Lemonade Cream Soak
-
1 can sweetened condensed milk
-
• ½ cup lemonade
-
(store-bought or homemade)
-
• 2 tablespoons lemon juice
Whipped Frosting
-
8 ounces cream cheese, softened
-
1 cup heavy whipping cream
-
½ cup powdered sugar
-
1 teaspoon vanilla
-
1-2 tablespoons lemon juice
Optional toppings

lemon slices
-
crushed vanilla wafers
-
strawberries
-
fresh mint
-
extra lemon zest
Directions
1. Bake the cake
Preheat oven to 350°F.
Grease a 9x13 baking dish.
In a bowl whisk together: flour, baking powder, baking soda, salt
In another bowl cream: butter and sugar
Beat until fluffy.
Add eggs one at a time.
Mix in: vanilla, lemon zest, lemon juice
Alternate adding: flour mixture and buttermilk
Mix just until combined.
Pour into baking dish and bake 32-38 minutes until golden and set.
2. Make the lemonade soak
Whisk together: sweetened condensed milk, lemonade and lemon juice
When cake is warm, poke holes all over with the end of a wooden spoon.
Slowly pour the lemonade mixture over the cake letting it soak down inside.
Cool completely.
3. Make the frosting
Beat cream cheese until smooth.
Add: powered sugar, vanilla and lemon juice
Slowly stream in heavy cream and whip until fluffy and spreadable.
Spread over cooled cake.
Top with lemon zest and berries if desired.
