This lasagna is cheesier than one of James's pick up lines and as bold as Sam Elliott's voice telling you to make this lasagna! Truly one of my all time favorite meals! This recipe comes from my mama and we always have such a good time making it. As a child, my favorite part was stuffing the noodles lol! Well, still to this day that's my favorite part!
Let's talk about the cream cheese/cottage cheese mixer. As I said before, this is my mama's recipe and as she started experimenting with different cheeses at home she noticed that she didn't really like the taste of ricotta. Which lead to the switch to cream cheese.
When I started experimenting with this recipe as an adult I quickly noticed that I didn't really care for the taste of ricotta either. So, I switched back immediately. Everyone I cook this lasagna for loves it and always asks what's in it. When I tell them it's the cream cheese they are always floored and I get a good giggle.
Did you know that Lasagna can be traced back to Ancient Greece? Like I'm talkin a long long long time ago but modern day lasagna made it's debut in Naples Italy. Lasagna was made for a crowd or special occasion.
Which makes total sense to me because this was the one dish that my mama brought to every get together for our family. She would sometimes be asked to bring it for Thanksgiving and Christmas!
Anyways, I'll hush and let y'all make this delicious meal that I was raised on.

Ingredients

1 Pound Hamburger Meat

1 8oz Cream Cheese

1 24oz Cottage Cheese

1 Box Manicotti Noodles

2 24oz Sauce
-
2 8oz Mozzarella Cheese

1 4oz Parmesan Cheese
-
1 Handful Spinach
-
1 Little Onion Chopped
-
2 Pieces Garlic Chopped
-
1 Handful Shiitake Mushrooms
-
1 tbsp Italian Seasoning
-
1 tablespoon Onion Powder
-
1 tbsp Garlic Powder
-
1 Sprinkle Pepper
-
1 Sprinkle Garlic Salt
Directions
Preheat your oven to 350 degrees.
Preheat your cast iron with a little oil or butter.
Once heated add your hamburger meat.
Chop your onion and garlic.
Once meat is halfway cooked add your onion and garlic to the pan. Place back on the stove for about 5 - 8 minutes or until the onion is cooked fully.
While that's going, grab your room temp cream cheese, cottage cheese, noodles and spinach.
Mix the cheese and spinach together in a bowl.
Start stuffing your noodles with the cheese/spinach mixture.
Add your stuffed noodles to the sauce.
Now sprinkle your cheese to the top and throw that bad boy in the oven for 35 to 45 minutes!
Let rest for at least 5 to 10 minutes before grabbing you a plate!
