A homemade marshmallow fluff made with honey is a soft, airy spread that brings a naturally sweet, lightly floral twist to the classic version. Instead of corn syrup, warm honey is whipped into egg whites (or a gelatin base, depending on the method) to create a glossy, cloud like texture. The result is smooth, creamy, and just sweet enough-with a deeper flavor that pairs beautifully with chocolate, fruit, or anything that calls for a little something special. It's a simple, from scratch treat that feels both nostalgic and a little more wholesome.


Ingredients:


3 egg whites

2/3 cup cane sugar

3/4 cup honey

1/4 cup room temperature water

1/4 teaspoon cream of tartar

Vanilla (to taste)

salt 

Add 1 extra egg white to make it slightly less sweet and more voluminous

Add vanilla bean paste for deeper flavor


Instructions:


Whip the egg whites

Beat egg whites and cream of tartar until stiff peaks form.

Make the hot syrup

In a saucepan, bring honey, sugar, and water to 246°F (soft-ball stage).

Stream into mixer

With the mixer on low, slowly stream the hot syrup into the whipped egg whites.

Whip until fluffy

Add vanilla and salt. Turn mixer to high and beat for about 8-10 minutes, until stable, glossy, and fluffy.

Store

Spoon into a jar and enjoy within 2 weeks.
