Lemon Cheesecake with Homemade Crust

Ingredients
Homemade Graham Crackers

2 cups wheat flour

1 tbsp cinnamon

1 tsp cayenne
-
1 tbsp baking powder

1 tsp salt
-
1 cup brown sugar
-
1 stick softened butter
-
¼ cup milk
-
¼ cup honey
-
vanilla
Lemon Cheesecake
-
4 blocks cream cheese
-
1 cup sugar
-
¾ cup sour cream
-
vanilla
-
salt
-
4 eggs
-
zest & juice from 2 lemons
Homemade Crust
-
2 cups graham crackers
-
¼ cup sugar
-
1 stick of softened butter
Directions
Homemade Graham Cracker
In a stand mixer, cream together butter and sugar until light and fluffy.
Mix in the milk, honey and vanilla extract.
Add the dry mixture and mix it up good.
Once a dough forms, let chill for at least one hour.
Flour a sheet of parchment paper and place dough on the sheet. Flour your rolling pin and start rolling. Make sure to get it thin.
Score dough into twelve rectangles and prick mini holes inside each rectangle with a fork.
Bake at 350F for 12 minutes or until crackers have darkened.
Let cool before eating.
Homemade Crust
Mix together, graham cracker crumbs, sugar, brown sugar and butter.
Pour crumbs into a 10" cast-iron or cake pan and press in it good to the bottom and sides.
Bake at 325F for 8-10 minutes. Take out and set aside.
Lemon Cheesecake
In a mixer or bowl, mix the cream cheese and sugar until whipped.
Add sour cream, vanilla, salt, and mix.
Add eggs and mix some more.
Pour cheesecake batter into the pan with the crust.
Bake at 325F for about 1 hr or until edges have turned a light golden brown.
Allow it to completely cool before diving in.
