A little fun fact! This was my first time making chicken gnocchi soup with homemade gnocchi's and I won't ever go back to store bought. If you have never made gnocchi from scratch, I would really suggest you try it at least once. You will have a blast making them especially if you put on some tunes and dance a little.
Did you know that Chicken Gnocchi Soup has a long history and was originated in Italy as a simple meal for peasants? Me either!
When Italian immigrants brought it to America, it gained popularity and has became one of my most favorite comfort foods ever. Just another little fun fact!

I first experienced chicken gnocchi soup at Olive Garden as many of us probably have and isn't it so good? Do you always walk away thinking, I want to learn how to make this at home? Me too! I also wanted to know how to make this at home because let's get real.. taking 2 toddlers in a restaurant is a trip but I'll save that story for another time!

Ingredients

1 tablespoon Tallow or Oil

2 Chicken Breast

1 tablespoon Garlic Salt

1 tablespoon Garlic Powder
-
1 tbsp Onion Powder
-
1 tablespoon Basil
-
1 tbsp Thyme
-
1 tbsp Parsley
-
1 sprinkle Pepper
-
½ Onion
-
2 Celery Sticks
-
2 Carrots
-
2 Piece of Garlic
-
1 Whole Stick of Butter
-
6 Cups Chicken Broth
-
2 Cups Gnocchi (add more if you want to)
-
2 Cups Heavy Cream
-
2 Handfulls Spinach
-
½ Cup Parmesan Cheese (add more if you want to)
Directions
It's time to prep! Cut all your veggies and meat!
Set all that aside for a minute.
Oil in your pan, heat it up.
Season your chicken and throw it in the pan.
Sear your chicken for 8 to 12 minutes or until golden brown.
Scrap all that brown goodness off the bottom and add your veggies.
Cook veggies for 5 to 8 minutes.
Now add that butter and let melt.
Once butter is good and melted add chicken broth.
Bring to a low boil and drop them gnocchi's in.
Cook for about 5 minutes or until gnocchi's start to float.
Add your cream, spinach and cheese. (Don't be scared to use a lot more cheese than recommended, you know I would.)
Cook for 5 more minutes and let cool. Enjoy my friends!
