Ingredients

½ cup (1 stick) unsalted butter

½ cup brown sugar
-
¼ cup granulated sugar
-
1 very ripe banana (mashed smooth)

1 large egg + 1 egg yolk
-
vanilla extract
-
1 ½ cups all-purpose flour
-
1 tsp baking soda
-
1 tsp baking powder
-
salt
-
cinnamon (optional but highly recommended)

1 cup chocolate chips or chunks
-
Flaky sea salt (for finishing)
Directions
Melt the butter in a pan over medium heat. Let it bubble and turn golden with little brown specks. It’ll smell nutty and warm.
Pull it off heat and let it cool 10-15 minutes.
In a bowl, whisk together: Brown butter and Brown sugar + white sugar
Add: Mashed banana, Egg + yolk and Vanilla
Whisk until smooth and glossy.
Stir in:
Flour, Baking soda + baking powder, Salt and Cinnamon
Mix just until combined (don’t overwork it).
Add those chocolate chunks like you mean it.
Refrigerate dough 30-60 minutes
Oven: 350°F
Scoop big, bakery-style cookies
Bake 10-12 minutes
Edges set, centers still soft = perfect.
Right out of the oven:
Sprinkle with flaky salt. Let them sit 5 minutes before moving.
