Blackberry Cobbler Icebox Cake

Ingredients

    • 4 cups blackberries

    • ½ cup sugar

    • 1 tablespoon lemon juice

    • 1 tablespoon cornstarch

    • splash vanilla

    • 8 ounces cream cheese, softened

    • 1 can sweetened condensed milk

    • 2 cups heavy whipping cream

    • 1 teaspoon vanilla

    • • 1 box Biscoff cookies

    • crushed biscoff cookies

    • fresh blackberries

    • lemon zest

    • honey drizzle

    • whipped cream

    Directions

      1. Add to saucepan: blackberries, sugar and lemon juice

      2. Cook until berries burst.

      3. Stir in cornstarch mixed with a tiny splash of water.

      4. Simmer until thickened and glossy.

      5. Cool completely.

      1. Beat cream cheese until smooth.

      2. Mix in: sweetened condensed milk and vanilla

      3. In separate bowl whip heavy cream until fluffy.

      4. Fold together gently.

      1. In a 9x13 dish, layer: cookies, cream mixture, blackberry filling and repeat layers

      2. Finish with blackberry topping and a handful or two of blackberries

      1. Refrigerate at least 6 hours, preferably overnight.

      2. The cookies soften into a cobbler cake texture.
